How would the book be different if the Religious symbolism was removed and/or the entire religious subplot?

The title of the novel is clearly appropriate due to the very apparent theme of god and nature throughout. What conclusions and connections can be made about the novel when we examine the title? Why is it "their eyes were watching god" as opposed to "god was watching them"?
